Summer Smoothies

Vegan Mango-Coconut Green Smoothie
You will need:
     ·         1 cup – fresh washed baby spinach leaves
     ·         1 cup – mango cubes, fresh or frozen
     ·         ½ medium banana
     ·         ¾ cup – light canned coconut milk
     ·         ½ cup – orange juice
     ·         ½ cup ice cubes

Optional extras
     ·         1 tbsp – coconut butter, for extra coconutiness, plus fibre and a little protein
     ·         1 tbsp – ground flaxseeds, for fibre and omega-3 fatty acids and protein
     ·         Chopped mango and/or coconut shavings for a topping.

Directions:
     1.          Place all ingredients in a blender and puree until smooth.
     2.        Pour into glasses and add toppings if desired.
     3.        Serve with a straw.

Apple, Carrot & Peach Smoothie
You will need:
     ·         1 medium carrot, peeled
     ·         2 medium size apples, peeled and deseeded
     ·         1 medium size peach, peeled and destoned
     ·         5 tbsp – fat free yoghurt
     ·         5 tbsp – milk

Directions:
     1.          Chop the carrot, the apples and the peaches into bite size pieces and add them to a blender.
     2.        Pour over the yoghurt and milk and puree until smooth.

     3.        Serve immediately.
